Taste of Today: Tiramisu

A large slice of Tiramisu

TIRAMISU  (Serves 8)

  
Ingredients:
 
1                       Lemon Peel, finely grated
1 lb.                 Mascarpone (Italian double-cream cheese)
       Or substitute 12 oz. whipped cream cheese mixed with 8 oz. sour cream
4                       Egg Yolks
4 Tbsp.           Granulated Sugar
2 ½ Tbsp.       Coffee Flavored Liquor or Brandy
1 Cup              Strong, Cold Espresso
18-20               Ladyfinger Cookies
To Taste         Unsweetened Cocoa Powder
 
 
 
Procedure:
 
Beat the egg yolks and sugar together until fluffy. Fold in the mascarpone and the lemon peel.
Prepare one shallow glass serving bowl for serving family-style or eight wine goblets for individual servings.
In a mixing bowl combine the liquor with the espresso. Dip half the ladyfingers into the liquid and line the bottom of the dish with them.
Spread half the cream mixture over the cookies. Repeat these steps with the remaining ingredients.
Cover and refrigerate. Serve dusted with unsweetened cocoa powder.
 
 
 
Variations:  
 
Pumpkin - Add 4 oz pumpkin puree to the cheese mixture. Increase amounts by 1 egg yolk and 1 Tbsp. sugar.
 
Banana – Add a layer of thinly sliced bananas above each layer of ladyfingers. Substitute Crème de Banana for half of the Coffee Liquor.
