Skip the neon green, grocery store, relish. A fresh and healthy alternative.

Replace the neon green relish from the supermarket. All you need is a cucumber, onion, red pepper and seasoning to whip up an easy topping.

We don’t dislike the store bought brands but this is a fresher and healthier version.

  • 1 large cucumber split in half, seeded and cut into a small dice - about 2 cups
  • ¼ cup small diced red onion
  • 2 tbsp. minced red pepper
  • 1 tsp. kosher salt
  • ¼ cup red wine vinegar
  • 1 tbsp. whole grain mustard
  • 3 tbsp. sugar
  • 2-6 dashes Tabasco

Place the small diced cucumber in a mixing bowl with the red onion, minced red pepper and kosher salt, and let sit for 20 minutes.

Drain any liquid from the bottom of the bowl.

Now mix in the red wine vinegar, whole grain mustard, sugar and Tabasco.

Let it sit for 5 minutes for the flavors to meld.

Makes 2 cups.
