1/2 cup Mashed Ripe Bananas
1 large Egg
3 tbsp. Vegetable Oil
1/3 cup Milk
3 tbsp. Milk
1/3 cup Sugar
1 cup All Purpose Flour
1/2 tsp. Baking Soda
1/2 tsp. Baking Powder
1/4 tsp. Salt
Preheat griddle to 350ºf.
Combine the mashed bananas, egg, oil and the first measure of milk, whisking until smooth.
Sift the dry ingredients together.
Add the liquids to the dry ingredients and stir just until mixed.
Add the second measure of milk to the batter 1 tbsp. at a time until the batter just thins out.
It should spread out only slightly when put on the griddle. Add more milk as necessary.
Griddle the cakes on both sides until done, and enjoy!
