This recipe makes 1 quart.
- 3 ears of sweet corn, husked with kernels removed
- 3 plum tomatoes, chopped
- 1 clove garlic minced
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons olive oil
- Juice of 2 lemon
- 1 tablespoon honey
- Salt and pepper to taste
- Place all ingredients in a medium mixing bowl. Fully incorporate.
- Season to taste with salt and pepper.
- Serve on top of lettuce or as is with chicken, fish or tofu.
