Warm Mashed Potato Salad

This recipe makes 8-10 servings.


  • 4 pounds red bliss potatoes
  • 1 small red onion, sliced
  • 2 Tbsp. chopped parsley
  • 1 cup Italian dressing


  1. Place the potatoes in a pot large enough to hold them.
  2. Cover with cold water and bring to a simmer.
  3. Simmer until the potatoes are cooked.
  4. Drain and place into a large mixing bowl.
  5. Mash with a large kitchen spoon and toss in the sliced red onions and parsley.
  6. Add the cup of Italian dressing and mix well.
  7. Serve warm.
