Eggplant Tomato Relish

  • 1 eggplant diced
  • 1/4 cup chopped garlic
  • 2 cups olive oil
  • 4 cups pomodoro sauce
  • 1 each large zucchini diced
  • 2 T fennel seeds
  • 3 T zatar spice

Simmer garlic in oil until caramelized.

Add eggplant and simmer until opaque and soft.

Add the pomodoro sauce and zucchini.

Add the spices.

Simmer until eggplant is soft.

*This can be used in pasta, as a dip, or served hot on crusty bread.
