Connecticut Sweet Corn Fritters

A simple recipe to turn all that summer corn into a yummy treat.

  • 2 cups corn kernels, freshly cut from cob
  • 2 egg yolks
  • 1 tsp. salt
  • 1-1/4 cups all-purpose flour
  • 1 tsp. baking powder
  • 2 egg whites, beaten until stiff

Combine the corn and egg yolks and stir until smooth. Sift the flour, salt and baking powder into the corn, stirring until smooth. Fold in the beaten egg whites. Drop by spoonfuls into 350 degree oil and fry until golden. Drain and serve with tomato salsa or with a sweet maple dipping sauce.

Serves four.
