- 1 cup All Purpose flour
- 1/4 cup cornmeal
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 Tbsp. granulated sugar
- 1 tsp. ground cinnamon
- 1/4 tsp. ground ginger
- To taste freshly grated nutmeg
- 2 eggs
- 1 cup milk
- 2 Tbsp. white vinegar
- 1/2 cup fresh or canned pumpkin puree
- 1/4 cup canola oil
Sift the first nine dry ingredients into a bowl large enough to accommodate the remaining ingredients.
In a separate bowl, whisk together the five liquid ingredients until smooth.
Add the liquid ingredients to the dry ingredients, whisk until smooth.
Preheat your waffle iron. Add batter and cook according to the manufacturer's directions.
Serve immediately with maple syrup and sauteed apples. Enjoy!
Recipe makes about 4 waffles depending on the waffle iron used.
